Every summer has that one dish people ask about.
For us, it's Ben's Street Corn. Inspired by the bold flavours of Mexican street food and refined over the years in our kitchens, it has become one of the recipes that quietly marks the return of the season. Simple ingredients, plenty of texture and a balance of sweet, smoky, creamy and spicy flavours that keeps people coming back.
It all starts with sweetcorn, cooked until lightly charred to bring out its natural sweetness.
From there, each ingredient adds something different. A creamy green goddess dressing. Sweet spicy chilli jam for a gentle kick. Smoked paprika for warmth. Crumbled feta, fresh coriander and almond and cacao nib dukkah for texture. Finished with Tajín and fresh avocado, it comes together in a side that rarely stays a side for long.
You won't find every detail from our kitchens here, but this version captures everything we love about the dish and is easy to recreate at home.
- 4 ears of sweetcorn, or 400g sweetcorn kernels
- 100g cashews, soaked for at least 2 hours
- Juice of 1 lime
- 100g feta, crumbled
- 1 tsp smoked paprika
- 1 tsp chilli powder or Tajín
- A handful of fresh coriander
- Sea salt
- Lime wedges to serve
- Grill the sweetcorn until golden with a few lightly charred edges.
- Blend the soaked cashews with the lime juice, a splash of water and a pinch of chilli powder until smooth.
- Coat the warm sweetcorn with the cashew dressing.
- Finish with the feta, coriander, smoked paprika, Tajín and a generous squeeze of fresh lime.
Fresh, seasonal ingredients do most of the work, which is exactly why this recipe feels at home during the summer months.
Serve it alongside a barbecue, share it around the table or enjoy it as a light lunch. It is easy to make, easy to adapt and full of the flavours that make this time of year worth waiting for.
